L'histoire de La Maison Rose avant et pendant la Deuxième Guerre mondiale reste un mystère. Des photographies semblent indiquer que ce fut un cabaret pendant quelques années. En 1948, Béatrice Miolano, originaire de l'Italie du nord, achète ce petit restaurant français. Elle est parfois aidée ou remplacée par son fils Jean Miolano.

La Maison Rose has changed very little since it first opened around the year 1910. The restaurant's founders were a French-Spanish couple associated with Pablo Picasso. Laure "Germaine" Gargallo Florentin Pichot (Yep, that's a mouthful!) opened the restaurant with her husband, the Catalan painter Ramon Pichot Girones after getting married to him in 1905.

La Maison Rose however has remained virtually unchanged on the exterior since it was first built to neatly fill the triangular plot of land at the corner of rue de l'Abreuvoir and rue des Saules. Luckily, the cafe survived a planned demolition in the early 1930's when a new construction project planned for the site required the building to be pulled down.
